Wagashi—the delicate art of traditional Japanese confectionery—embodies the spirit of Japan and its deep reverence for the changing seasons. Each sweet reflects nature’s fleeting beauty, crafted with a sensitivity that appeals to both the palate and the eye.

Unlike Western confections, wagashi is meant to be enjoyed as part of a ritual. Served just before tea, it plays a supporting role in the experience—echoing the Japanese ideal of humility, much like a vassal to a samurai.

These sweets are more than desserts; they are seasonal expressions of emotion, crafted with elegance and restraint. Summer brings translucent treats reminiscent of cool water, while autumn may evoke falling leaves or ripened fruit. With infinite seasonal combinations, one could spend a lifetime without ever encountering the same wagashi twice.


 

ABout the artisans

We invite you to learn more about the rich culture of Japanese sweets from two confection experts who will teach you how to create your own unique wagashi. 

Pâtissier 2: Born into a lineage of wagashi-makers that can be traced back for generations, this pastry chef has been called upon to create wagashi to be used in traditional tea ceremonies for important dignitaries and state guests, including an overseas royal family. Even though the shop does not have a public store front, the patissier has agreed to give TOKI guests an exclusive access into his patisserie workshop for an inspirational and unique hands-on wagashi-making experience.

Pâtissier 1: World-renowned confectionery makers, such as Sadaharu Aoki and Jane-Charles Rochoux, have come seeking for the guidance of this legendary pâtissier. In order to deliver the highest quality products to his customers, he brings in fresh ingredients every day to his confectionery. We would like to offer you a special chance to visit his shop, explore the philosophy behind the preparation of wagashi, and use this knowledge to create your own unique wagashi.
